More Killer Coffees have arrived and we are super excited to be sharing them with all coffee lovers! Introducing this rare gem from Brazil, grown and produced by Daterra Coffee. The proud owner and the mastermind behind Daterra Coffee is Luis Pascoal. He is a visionary who was ahead of his time and has been growing coffee since 1993. A great advocate on environmental preservation and social development through adopting environmental-friendly practices. He also strives to provide better welfare for his farmers, to ensure a healthier and a sustainable ecosystem. 

The Bao Vista Farm is located within the Patrocanio area in the Cerrado Mineiro region. The high altitude terroirs and the desert-like climate gives it the advantage to grow exciting coffees with complex flavours and it is great for quality control during the crop season. Initially, the condition of the Bao Vista and the surroundings was in dire need of an ecosystem restoration. This encompasses the building of natural corridors and natural habitats for the flora and fauna, which also contributes back to healthier soil and better water source (spring water). By striking a partnership together with Sao Paulo State University – Luiz de Queiroz (ESALQ). Daterra Coffee created their first Daterra Environmental standards, called the Program for Environmental Adequacy (PEA). Daterra took about 10 years to revive and recondition the area before being able to produce high quality coffee and then exporting them worldwide. Apart from producing high quality coffee in harmony with nature, Daterra placed importance in the welfare and livelihood of their workers and community too. This was done through providing generous pay and better working standards for the workers. In addition to that, Daterra shares knowledge with other small coffee producers to encourage social progress and coffee security. Today, they are part of the Rainforest Alliance, the first ever coffee farm to be given this certification in Brazil. An impressive feat to say the least and a great initiative spearheaded by Luis Pascoal.

This special coffee from Lot D29 is of the Paraiso varietal. A very rare varietal, a cross breed between the Timor Hybrid and the Yellow Catuai. It produces yellow coffee cherries when ripe and is highly resistant to the Coffee Leaf Rust (CLR) Disease, particularly of the dangerous nematode type, Meloidogyne exigua. The coffee cherries are manually sorted and only the ripest of them are hand-picked. This coffee was produced using the natural aerobic fermentation process, a process that requires the presence of oxygen. No yeast, water or other additives were used for this process and the coffee was fermented in an open tank. Afterwards, the coffees will be sun-dried on the patio.

Through these rigorous steps and meticulous processes, it will highly likely make the coffee a little bit more special than others. The quality of this coffee showcases through the texture and complexity of the coffee. The flavours change with every sip taken. Medium to full body, light floral and spice aroma, specifically rose petals and lemongrass, very sweet like caramel, black raisin, liquorice, nutty, red apple, lime citrusy notes, and a really nice dark chocolate finish.
